Regulating Food Providers in the Medieval Balkans

The aim of this paper is to study the state regulations concerned with the activities of food providers in the medieval Balkans. It will analyse evidence concerning Constantinople from the "Book of the Eparch", dated to the 10th century, and the city statutes of Istria and Dalmatia, issued in the period between 13th and 15th centuries. Thus, it will examine the requirements for the practice of the professions of innkeeper, baker, and butcher and the penalties imposed in case of their violation.
